Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 head broccoli, chopped
  • 2 cups kale, chopped
  • 1 cup spinach
  • 1 zucchini, chopped
  • 1/4 cup fresh parsley
  • Salt and pepper to taste
  • 1/2 lemon, juiced

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and garlic until fragrant.
  3. Add vegetable broth, broccoli, kale, spinach, zucchini, and parsley. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Puree the soup with an immersion blender until smooth.
  5. Season with salt, pepper, and lemon juice.
  6. Serve warm.
