Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 1 can black beans, drained and rinsed
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- Corn tortillas
- Fresh lime, sliced
- Avocado, sliced
- Fresh cilantro for garnish
Instructions:
- Preheat oven to 400°F (200°C).
- Toss sweet potato cubes with olive oil, cumin, paprika, salt, and pepper.
- Spread on a baking sheet and roast for 25-30 minutes, until tender.
- Warm black beans in a small pot.
- Assemble tacos with roasted sweet potatoes, black beans, avocado slices, and fresh cilantro.
- Serve with lime wedges.
