Sweet Potato and Black Bean Tacos

Need a delicious meal idea? Give this sweet potato and black bean taco recipe a try.

Ingredients:

  • 2 large sweet potatoes, peeled and cubed
  • 1 can black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Corn tortillas
  • Fresh lime, sliced
  • Avocado, sliced
  • Fresh cilantro for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, cumin, paprika, salt, and pepper.
  3. Spread on a baking sheet and roast for 25-30 minutes, until tender.
  4. Warm black beans in a small pot.
  5. Assemble tacos with roasted sweet potatoes, black beans, avocado slices, and fresh cilantro.
  6. Serve with lime wedges.
